2 litres of organic whole milk
4 tablespoons of yoghurt (as starter)
Boil the milk
Let it cool down to 45 degrees Celcius
Add 1 tablespoon of yoghurt to 500ml jar
Stir a little
Cover up to keep warm
After 3.5hours at room temperature you can take into the fridge.

Chop red cabbage like a salad
Rub a table spoon of rock salt and rest for 10 minute.
Fill up 500ml jar tightly with the cabbage.
Add a cup of freshly squeezed lemon juice.
Fill the rest of the jar to the brim with drinking water.
Your ferment will be ready at room temperature after 2 days. You may take it to fridge or a cool room slowing down fermentation. Your ferment will keep crunchy for weeks without opening the jar. It is a delicious savoury side to protein rich dishes such as chickpea stew.
Fermented cabbage as a side
400gr radish per 500ml jar
Sliced in circles, as thick as a one pound coin and then halved
2 cloves of garlic
1 tablespoon salt
Juice of 1 lemon
Topped up with water to the brim
Locked in a jar at room temperature for 2 days minimum, keep in the fridge once opened.
