Roughly chopped, quickly prepared and amazing when fresh, Salsa is 10 minutes well spent for a refreshing condiment side with almost any protein/grain main.
2 tomatoes
1 onion
A bunch of coriander
Chillies/Jalapeños/Padron to taste
Lemon Juice
Extra Virgin Olive Oil
Salt
Mix-up well and serve fresh. This is the most classic version called 'Salsa Mexicana" due to resemblance of Mexican flag colours.
2 Avocados
1 onion
3 garlic cloves
a bunch of fresh coriander
1 Jalopeño or Padron pepper
1 tablespoon olive oil
1 lemon squeeze
salt
black pepper to taste
Whizz through the food processor to the desired texture. Goes really well with any protein such as Pinto Beans.
